1) Choose the right cut: Select skin on center cut fillets, 6 to 8 ounces each, with similar thickness so they cook evenly. Remove pin bones with tweezers. Pat fillets very dry on both sides with paper towels.
2) Dry brine for crisp skin: Sprinkle the skin side with kosher salt, about 1/2 teaspoon per pound of fish. Set the fillets skin side up on a rack over a plate in the fridge, uncovered, for 30 to 60 minutes. This wicks moisture from the skin so it crisps instead of steaming. Up to overnight is fine if timing allows.
3) Optional extra dry step: If your air fryer has a dehydrator or fan only function, a short pass can help. Run it for 5 to 10 minutes to circulate air over the skin, then proceed to cooking. Do not skip the final cook to a safe temperature.
4) Preheat well: Preheat the air fryer to 400 degrees Fahrenheit for 3 to 5 minutes so hot air is ready to hit the skin.
5) Season and oil: Brush a thin film of avocado or olive oil on the skin, about 1 teaspoon per fillet. Season the flesh side with salt, black pepper, and a low carb mix like paprika, garlic powder, lemon zest, or dill. Avoid sugary glazes before cooking.
6) Cook skin side down: Place fillets skin side down in a single layer. Do not overcrowd. Air needs space to flow between pieces.
7) Time by thickness, verify by temperature: Air fry at 390 to 400 degrees Fahrenheit. As a guide, a 1 inch thick fillet usually takes 8 to 12 minutes. Start checking early. Verify doneness with an instant read thermometer in the thickest part. Per USDA guidance, fish is done at 145 degrees Fahrenheit. Once it hits 145 degrees Fahrenheit, remove immediately to prevent overcooking.
8) Rest briefly for crispness: Rest 1 to 2 minutes on a rack, skin side up. Airflow keeps the skin glassy.
Tip: If the skin is nearly crisp but the center just hit 145 degrees Fahrenheit, lift the fillet out with a thin spatula and hold it skin side up in the hot, empty basket for 30 to 60 seconds to finish crisping without overcooking the flesh.
- Lemon dill: Lemon zest, minced dill, garlic powder, salt, black pepper. Finish with a squeeze of lemon. - Dijon herb: Dijon mustard thinned with olive oil, parsley, thyme, black pepper. Brush lightly on the flesh right after cooking. - Cajun spice: Paprika, cayenne, onion powder, garlic powder, oregano. Add a squeeze of lime. - Miso ginger: A small amount of white miso whisked with grated ginger and rice vinegar. Brush on after cooking to preserve crisp skin.
